Dumpling (饺子 jiǎo zi) is one of the Chinese people’s favorite traditional dishes. It becomes one of the most widely loved foods in China. This is because of many reasons. Here is a list of them. Chinese dumpling is one of the most important food in Chinese New Year. Since the shape of Chinese dumplings is similar to ancient Chinese gold or silver ingots, they symbolize wealth. Traditionally, the members of a family get together to make dumplings during the New Year's Eve. They may hide a coin in one of the dumplings. The person who find the coin will likely have a good fortune in the New Year. Chinese dumpling is also popular in other Chinese holidays or festivals, so it is part of the Chinese culture or tradition.
OK, now let me teach you how to make it.
According to an ancient Chinese legend, dumplings were first made by the medical saint---Zhang Zhongjing. There are three steps involved in making dumplings:
Prepare the dumpling stuffing
1. Pour some water into the wheat flour, and stir it until it becomes a piece of dough, then put three egg whites in the 250 gram flour, it may cause the stuffed dumpling skin nicely chewy skidding. After that put them for 20 minutes to "awake the dough".
2. Make dumpling wrappers out of dumpling flour(擀皮gǎn pí);
Cut the large piece of dough into many small pieces, roll the dough with a rolling pin into round,thin wrappers.Put the filling in the center of a wrapper,and fold it up.
3. Get some vegetables and meat ready. Remember, must put the oil before put the salt, in such vegetable moisture not easily is killed by the salt. In the end, put the ingredient such as spice, green onion and ginger to stir evenly.
4. Cook. Three ways to cook them: One is boil them, bring a large pot of water to a boil. Add half the dumplings, giving them a gentle stir so they don't stick together. Bring the water to a boil, and add 1/2 cup of cold water. Cover and repeat. When the dumplings come to a boil for a third time, they are ready. Drain and remove.

In northern of China, many people like dumplings are dipped(蘸zhàn)in vinegar and soy sauce and often eaten with a piece of raw garlic.
